The costs that are not goods
Short answer
Rent, utilities, software, advertising, professional fees — the costs that do not arrive as stock still decide the margin. They are categorised, and the category is both a filter and a line in the profit report.

A category you cannot report on is a label
Categories are only useful if the profit report uses them. Otherwise they are a tidy list nobody reads.
The same categories group the expense list and the operating section of the P&L, so a cost that grew is traceable to the rows that grew it.
Frequently asked questions
Do expense categories appear in the profit report?
Yes. The categories you use are the lines in the operating section of the P&L.
Can I split one invoice across categories?
Yes, line by line, so a mixed invoice does not have to be forced into one category.
